Gellan gum is a bacterial exopolysaccharide discovered in 1978. It is produced by the bacterium Pseudomonas. The gum is formed by inoculating a carefully formulated fermentation medium with this organism. The medium consists of a carbon source, a nitrogen source and a number of inorganic salts. The fermentation should be processed under sterile conditions with strict control of aeration, agitation, temperature and PH. After the fermentation process, the alive organisms would be killed and the gellan gum be extracted.
Now the gum has been broadly applied in food and chemical fields as gelling, suspending and thickening agent.

Gellan gum can form gel at very low dosage which helps to reduce the cost. The gelling strength produced by 0.25% dosage of gellan gum would cost 15% of agar or 1% of carrageen an. Then gellan gum has been gradually replacing agar and carrageen an in the food and chemical area.
It's an ideal and natural food additive as gelling agent with unique advantages over other colloids.
